Aubergine and Pepper Salad

With the weather being so temperamental at the moment I feel a bit lost with what to prepare in the kitchen. It’s been raining like mad which makes me feel cool and cosy feeling the need for a warmer meal. On the other hand it’s just so humid so something really light just feels like the right way to go. I’ve concocted this cheeky little number which is really light and healthy, but also nice and warm as it’s served fresh from the grill.

Ingredients:

  • 1 aubergine, sliced
  • 1 sweet pointed red pepper, sliced
  • 1 tbsp Tahini
  • Lemon
  • 1 dsp pine nuts
  • Crushed black pepper
  • Salt

Method:

  1. Place the aubergine and pepper onto a baking tray. Season with salt and generously with the crushed black pepper.
  2. Drizzle over olive oil and grill on medium-high or 200 in an electric grill.
  3. Grill for 10 minutes, then flip the vegetables over and put back in the grill for an additional 10 minutes or remove the tray when the vegetables have charred and have softened.
  4. Place the aubergine and pepper on to the serving dish of choice. Drizzle over the tahini and lemon juice and scatter over the pine nuts and serve.

Date & Almond Drink

A combination of sweet, nutty, almost ‘caramelly’ flavours are just the way to go if you’re feeling a morning or after lunch sweet ‘pick me up’. An easy way of getting your sweet kick without having to spend a lot of time in the kitchen.

Serves 1

Ingredients:

  • 250ml almond milk
  • 5 pitted dates
  • 1 tbsp golden syrup
  • Cinnamon

Method

  1. In a blender add all the ingredients, including a light sprinkling of the cinnamon and blitz until smooth. Serve immediately in your favourite tumbler glass.

Banana and Coconut Crumble

During the lockdown period everyone has gone to town on making banana bread. Now, don’t get me wrong, banana bread is good but I wanted to mix things up a bit and made my own little twist to a classic dessert. So here we are, another way to make use of those extra bananas; I hope you all enjoy.

Serves 2-3

Ingredients:

  • 3 ripe bananas
  • 100ml coconut milk
  • 1tsp ground cinnamon
  • 1/4tsp ground nutmeg
  • 1 dessert spoon of coconut flakes
  • 70g self-raising flour
  • 42g butter
  • 30g light brown sugar
  • 2tsp maple syrup

Method:

  1. Preheat the oven to Gas Mark 5.
  2. Roughly slice the bananas, layer and spread across a baking dish.
  3. Put the coconut milk, cinnamon, nutmeg and maple syrup in a bowl and give it a good mix.
  4. In a separate bowl put the flour and butter together and rub to make a crumble.
  5. Then add the sugar and the coconut flakes and mix together with your hands.
  6. Pour over the coconut milk mixture over the bananas.
  7. Evenly scatter the crumble over the bananas and bake in the oven for 20 minutes or until the crumble is golden brown.

Best served hot. Delicious on its own or with a serving of single cream or ice cream.
